Super quick spiced roasted nuts
I eat nuts everyday. In Spain we have almond trees which keep us going throughout the year. I had a few nuts leftover from my last trip so I mixed them together with a bag of unsalted mixed cashews, brazil, pecan and walnuts. About 400g total weight, roasted them for ten minutes or so (190c/375f) with 2Tbsp/30ml extra virgin olive oil, 1/2 tsp ground ginger and 1/2 tsp cinnamon.
Not really a recipe but an essential gathering of store cupboard ingredients.
Great to have with Greek yoghurt and seasonal fruit in the morning, roughly chopped on salads or crunch a few with an evening tipple.
